Sharkfin Pie

Grab that tissue, I'm about to make ya drool! ;) I thought I'd share this tasty recipe with you... but it's not mine! This ever-so-yummy dessert belongs to Mitchell's Fish Market. I had the grand opportunity to dine here while on bizcation in Tampa. The entrée was delish, but I'm a sucker for dessert and they did not fail to impress. But don't let me convince you, feast your eyes on this...

1 gallon Butter Fudge Ripple Ice Cream (or similar flavor)
½ cup Peanut Butter
½ cup Fudge sauce
2 cups Honey Roasted Peanuts, ground

Oreo Crust:
1 ¾ cup Oreo Crumbs
¼ cup Melted Butter

To prepare the pie crust combine cookie crumbs and butter. Press into 10” aluminum pie time. Bake 6-8 minutes at 300 degrees. Then freeze shells.

Soften ice cream. Fill shells to rim and refreeze.

Spread peanut butter over top of ice cream. Next spread fudge sauce over peanut butter. Sprinkle the fudge with ½ cup of peanuts and refreeze again. Mound remaining ice cream on top and refreeze. Top with remaining 1 ½ cups of honey roasted peanuts.

Spring Tulips

This time of year is special for so many reasons. Later on, I plan to post about the most significant part of this year... A holiday that truly is the most important.

One thing that always places a smile on my face are the lovely blooms adorning flower beds across town. One in particular is the annual appearance of the tulip. Such grace and elegance is seen in this ladylike flower.

What a beautiful reminder of God's creativity!

B-A-Y-L-O-R, Baylor Bears Fight!

I'd like to make a shout out to the Men's Baylor University basketball team. Not only did they make it to the Sweet 16 (first in school's history), but they went even further and continued on to the Elite 8 and played a great game (including some exciting dunks) against no 1 seed Duke University. As an alum, I am proud. Way-to-go guys!

Goin' for a Ride

My friend had the great idea of starting up a biking club of sorts (nerdy? yes, but it's the only term I can think of to describe) where a bunch of us will get together on Friday's after work and head out to the park for a quick bike ride followed by dinner and drinks at a local Uptown spot. The weather these days is just beautiful and what a better way to spend my time outdoors than by being with friends and getting some work week energy out at the same time?! ...

My only problem is that I don't actually own a bike. My parents have one I can borrow, but I may want to spring for a new one!

Any suggestions on a good bicycle... decent price, for casual riding?

St. Patrick's Day in the Big D

St. Patrick's Day 2010. Yep, it already happened. Dallas style.

The 31st Annual Greenville Avenue St. Patrick's Day Parade is what I'm talking about and I was there to take it all in along with 100,000 other people.

Dressed in green, a group of us gathered at my friend Kristin's house for a top o' the morning breakfast of green eggs and ham (quite fitting), mimosas and coffee, of course! Tummy's full and spirits high, we headed out for our 2-mile jaunt to our chosen location on Greenville Avenue to watch the parade. This was not your typical parade. As a Baylor University alum, I am used to a parade, but this was more Mardi Gras style - bead throwing, and... well, I won't go into the rest...

It was fun to experience.

It was one big communal party.

Imaginate via Chalkboard

When I was little, I loved to "imaginate" (imagine + create). I am also a very visual person, and even though I am not artistic (stick figures at best), I loved (yes, past tense) to draw. My older sister and I had a chalkboard that become warped due to all of the pressure created from drawing after drawing and tic-tac-toe games. As I grow older, the nostalgia kicks in and I miss the days of simplicity and more hours in the day to imaginate.

In remembrance of those days, I have become fascinated with the different, more modern uses of chalkboard.
