Icy, Creamy, & Crunchy

Tonight, I will be delighting my tongue with ice cream sandwiches at a local shop called Pokey O's . They're having their 5th Anniversary and celebrating with $1 sandwiches.  Because I will be suffering, I want you to be suffering right along with me ;) ... Not only do these ice cream & cookies look oh-so yummy, they're perfectly colored for Easter!  I think this would be the perfect treat for kids, or grown up kids :) Here's the recipe.

Poolish Thoughts

It's starting to feel like pool weather, at least in Texas.  This weekend we had 80 degree weather.  Such a wonderful change, especially with the clear skies and bright sun!  I'm pretty excited for my refill of vitamin D ;)  This gets me in the mood for days lounging by the pool or at least lots of time outdoors.  Fortunately, since I work on the week days, the Lord has blessed us with beautiful weather on the weekends for all to enjoy!  What's your favorite thing about this time of year?

How's Your Tikkr?

If you haven't already guessed, I have slight obsession with watches.  I was shopping with a girlfriend the other day and she pulled me over to show me this gal's watch.  Very cool.  It's big, colorful AND you can change out the bands.  I wanted to share it with you guys because there may be a chance some of you share my same passion for watches.  So, I introduce to you, TIKKR.  Isn't that a cool name?  See for yourself...

Do The Salsa Dip

Hello! I wanted to share this recipe with you because it's simply delicious.  Use it at your next party or keep around for a quick, somewhat healthy & tasty snack!  My mom made it for an appetizer at my birthday dinner and it was a hit!

Fruit Salsa with Homemade Cinnamon Tortilla Chips

{Recipe from Taste of Home}

Ingredients

• 1 cup finely chopped fresh strawberries
• 1 medium navel orange, peeled and finely chopped
• 3 medium kiwifruit, peeled and finely chopped
• 1 can (8 ounces) unsweetened crushed pineapple, drained
• 1 tablespoon lemon juice
• 1-1/2 teaspoons sugar
• 
  CINNAMON CHIPS:
• 10 flour tortillas (8 inches)
• 1/4 cup butter, melted
• 1/3 cup sugar
• 1 teaspoon ground cinnamon

Directions

• In a small bowl, combine the first six ingredients. Cover and refrigerate until serving.
• For chips, brush tortillas with butter; cut each into eight wedges. Combine sugar and cinnamon; sprinkle over tortillas. Place on ungreased baking sheets.
• Bake at 350° for 5-10 minutes or just until crisp. Serve with fruit salsa. Yield: 2-1/2 cups salsa (80 chips)

Do you know you're beautiful?  I've been going through a lot of changes this past year... growing in lots of ways, learning more in other ways.  God has truly remained a constant source of trust, strength and hope throughout all of it.  He is the maker of beautiful things, including you.

I went to a trunk show last night at We Are 1976 for the jewelry, housewares, and gift line, f. is for frank.  Great jewelry - funky, fashionable, and unique.  Check out their website here and be on the lookout for their new pieces (that were featured last night) –– I didn't capture any images of the new selections (except the one below), but they sure our fun and all of their jewelry is very well made.
