Tonight, I will be delighting my tongue with ice cream sandwiches at a local shop called Pokey O's . They're having their 5th Anniversary and celebrating with $1 sandwiches. Because I will be suffering, I want you to be suffering right along with me ;) ... Not only do these ice cream & cookies look oh-so yummy, they're perfectly colored for Easter! I think this would be the perfect treat for kids, or grown up kids :) Here's the recipe.
It's starting to feel like pool weather, at least in Texas. This weekend we had 80 degree weather. Such a wonderful change, especially with the clear skies and bright sun! I'm pretty excited for my refill of vitamin D ;) This gets me in the mood for days lounging by the pool or at least lots of time outdoors. Fortunately, since I work on the week days, the Lord has blessed us with beautiful weather on the weekends for all to enjoy! What's your favorite thing about this time of year?

Hello! I wanted to share this recipe with you because it's simply delicious. Use it at your next party or keep around for a quick, somewhat healthy & tasty snack! My mom made it for an appetizer at my birthday dinner and it was a hit!
1 can (8 ounces) unsweetened crushed pineapple, drained
1 tablespoon lemon juice
1-1/2 teaspoons sugar
CINNAMON CHIPS:
10 flour tortillas (8 inches)
1/4 cup butter, melted
1/3 cup sugar
1 teaspoon ground cinnamon
Directions
In a small bowl, combine the first six ingredients. Cover and refrigerate until serving.
For chips, brush tortillas with butter; cut each into eight wedges. Combine sugar and cinnamon; sprinkle over tortillas. Place on ungreased baking sheets.
Bake at 350° for 5-10 minutes or just until crisp. Serve with fruit salsa. Yield: 2-1/2 cups salsa (80 chips)
